I'm officially obsessed with Smitten Kitchen. Haven't had a bad recipe yet from this site, and this stew was no different. Even though I can just feel spring right around the corner, I'm still loving really hearty comfort food right now. So, in making my way through some of SK's recipe archives, this one stood out right away.
First of all, it reminded me of eating stroganoff as a kid. One of my Mom's signature weeknight meals. One of the first meals I learned to cook myself, in fact! Second, anything that involves tomato paste and red wine goes over really well with Josh. And egg noodles. That boy says he ate egg noodles like they were going out of style growing up.
The best part? This takes no where near as long to make as your basic (or not so basic) Boeuf Bourguignon.
Topped with a blob of sour cream, it was everything I wanted on a very cold February night. Also, there's something about mushrooms that make up for the meatless-ness completely - you don't miss the beef whatsoever!
Beef stroganoff might possible be my favorite meal ever. I'll have to check out that recipe. Thanks!
